The Tenuta Rasciatano with its secular olive trees is situated half way between the seeside and the butresses of Murgia hills in that particular area where the olive oil tradition has roots going back several centuries.

The productive cicle starts whit the flower which blooms in late spring and is looked after until it becomes a ripe fruit.

At this stage modern shaking machines "harvest" the olives wich by means of large nets never touch the ground and are immediately sent to the mill so that acidity can be kept at its lowest.

The objective during the ripening of the olive is to keep under control fungus and pets.

 

Having completely banned chemical antipests this control is carried out by well experimented techniques of biological fight and guided prevention.

Extra virgin olive oil is the result of a cold pressing process which occurs in the months of November, December and January in an oil mill where we have achieved the perfect blend of tradition and technology. The rate of acidity very seldom reaches 0.3 degrees and peroxides are exceptionally low.
